Description
The orange and Muscatel wine combines perfectly with the persimmon to make this exotic jam. We prefer wild persimmon grown in scattered trees for their orange-red juicy pulp, and somewhat bittersweet taste, and finish it with the distinctive flavor of walnuts. Excellent when paired with ricotta or any other soft fresh cheese.

Meet the raw materials
The persimmon is from China although much more popular in Japan in Portugal can be found two varieties predominate: the red and the orange. The first is the most consumed presenting in its mature state as a very sweet and soft fruit requiring great care to make your transportation. The second variety is much harder without the need for great care in handling. Its fruit, known as persimmon or Japanese apricot, has inside large amount of water and is low in calories, vitamins are part of its composition in addition to protein, iron and calcium.
